Butternut Squash Soup

Ingredients

  • SIMMER INGREDIENTS:
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 1 Granny Smith apple, peeled and diced
  • 1 butternut squash (2-3 lb, peeled, seeds removed, diced)
  • 4 cups stock
  • BLEND INGREDIENTS:
  • ½ cup Astro Original 6% Yogurt
  • 2 tsp salt
  • ½ tsp cinnamon
  • ½ tsp cumin
  • 1 tsp pepper
  • ½ tsp maple syrup

Preparation

  1. Simmer the ingredients from the simmer section for 20 minutes.
  2. Once complete, blend in the ingredients in the blend section.
  3. Serve!
