Butternut Squash Soup

Ingredients
- SIMMER INGREDIENTS:
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 large carrot, diced
- 1 Granny Smith apple, peeled and diced
- 1 butternut squash (2-3 lb, peeled, seeds removed, diced)
- 4 cups stock
- BLEND INGREDIENTS:
- ½ cup Astro Original 6% Yogurt
- 2 tsp salt
- ½ tsp cinnamon
- ½ tsp cumin
- 1 tsp pepper
- ½ tsp maple syrup
Preparation
- Simmer the ingredients from the simmer section for 20 minutes.
- Once complete, blend in the ingredients in the blend section.
- Serve!
